Thai Tom Yum

- •1 lb Shrimp
- •4 stalks Lemongrass
- •5 leaves Kaffir lime leaves
- •3 slices Galangal
- •5 whole Thai chilies
- •3 cups Mushrooms
- •4 tbsp Fish sauce
- •4 tbsp Lime juice
- •1 tbsp Tom Yum paste

Bring 4 cups chicken or shrimp stock to a boil over high heat.
💡 Ice bath immediately to stop cooking and preserve color. Do not skip the salt in the water.

Add lemongrass slices, galangal, and kaffir lime leaves. Simmer for 10 minutes.

Add mushrooms (shiitake or oyster) and cook for 3 minutes.

Add shrimp or chicken pieces and cook until just pink, about 3 minutes.

Remove from heat. Stir in fish sauce, lime juice, and Thai chilies.
