- •8 oz Rice noodles
- •1 lb Shrimp
- •2 large Eggs
- •8 oz Tofu
- •2 cups Bean sprouts
- •3 stalks Green onions
- •3 cloves Garlic
- •3 tbsp Fish sauce
- •2 tbsp Tamarind paste
- •2 tbsp Palm sugar
- •0.5 cup Peanuts
- •1 whole Lime
- •2 tbsp Dried shrimp
- •0.5 cup Chinese chives
Instructions

Soak rice noodles in warm water for 30 minutes until pliable. Drain well.

Mix fish sauce, tamarind paste, and palm sugar to make the sauce.

Press tofu dry, cut into 1-inch cubes. Fry in oil until golden on all sides.

Remove tofu. In same wok, sauté garlic until fragrant, about 30 seconds.

Add shrimp, cook until pink, about 2 minutes. Push to side.

Beat eggs and scramble in the wok. Add noodles and sauce.

Toss everything together for 2-3 minutes until noodles are cooked.

Add tofu, bean sprouts, green onions, dried shrimp. Toss briefly.

Serve with crushed peanuts, lime wedges, and extra chives.
