Thai Massaman Curry

Ingredients
- •1 lb Beef chuck
- •400 ml Coconut milk
- •3 tbsp Massaman curry paste
- •2 medium Potatoes
- •1 large Onion
- •2 tbsp Fish sauce
- •2 tbsp Palm sugar
- •2 tbsp Peanuts
- •2 leaves Bay leaves

Cut chicken into bite-sized pieces. Season with salt and pepper.

Heat oil in a large pot over medium heat. Add massaman curry paste and fry for 2 minutes until fragrant.

Add chicken and coat with the curry paste. Cook for 5 minutes until chicken starts to brown.

Pour in coconut milk, fish sauce, palm sugar, and tamarind paste. Stir to combine.

Add potatoes and peanuts. Simmer for 25-30 minutes until potatoes are tender and sauce thickens.

Taste and adjust seasoning. Add more fish sauce or palm sugar as needed.

Serve over steamed jasmine rice with sliced red chilies and fresh cilantro.
💡 Authentic massaman uses dried shrimp paste - add 1 tsp if available.
