Massaman Curry

- •14 oz Coconut milk
- •60 g Massaman curry paste
- •300 g Potatoes
- •1 large Onion
- •100 g Peanuts
- •30 ml Tamarind paste
- •3 tbsp Fish sauce
- •2 tbsp Palm sugar
- •1 piece Cinnamon stick

Cut chicken thighs into 1-inch pieces. Soak potatoes in water to remove excess starch.

Heat oil in a large pan over medium-high heat. Add Massaman curry paste and fry for 2 minutes until fragrant.

Add chicken pieces and stir-fry for 5 minutes until sealed on all sides. Add coconut milk and bring to simmer.
