
Ropa Vieja
Cuban shredded beef in a rich tomato sauce with olives and peppers. Tender and aromatic.
Ingredients
- •2 lbs Flank steak
- •1 teaspoon Salt
- •2 large Onions
- •0.5 teaspoon Black pepper
- •2 pieces Bell peppers
- •2 cans Tomatoes
- •2 tablespoons Olive oil
- •3 cloves Garlic
- •1 medium Onion
- •2 tbsp Cumin
- •1 tbsp Oregano
- •3 pieces Bay leaves
- •0.5 cup Wine
- •3 tbsp Capers
Instructions

Boil steak until tender, shred

Sauté onions and peppers until soft
💡 High heat with small amount of fat. Ingredients should sizzle but not steam.

Add garlic, cumin, oregano

Add tomatoes, wine, capers, bay leaves
💡 Simmer 30 min

Add shredded beef, cook 20 more min
💡 Rest before slicing against the grain. Ground beef should be cooked through.
