- •2 cups Basil
- •0.5 cup Pine nuts
- •1 lb Pasta
- •1 tablespoon Salt
- •0.5 cup Parmesan
- •3 cloves Garlic
- •2 tablespoons Olive oil
- •1 piece Lemon
- •0.5 cup Parmesan cheese
- •4 tablespoons Butter
- •1 lb Spaghetti
- •1 cup Cherry tomatoes
- •8 oz Mozzarella

Bring a large pot of salted water to boil for pasta.

Toast pine nuts in a dry pan over medium heat until golden, about 3 minutes. Watch carefully.

Blend fresh basil, toasted pine nuts, garlic, parmesan, and olive oil until smooth.

Add lemon juice and season with salt and pepper. Adjust consistency with pasta water.

Cook pasta until al dente. Reserve 1 cup pasta water before draining.

Toss hot pasta with pesto, adding pasta water as needed. Serve immediately.
💡 Never cook pesto - toss it off heat to preserve the bright green color.
