Ingredients

  • 1 large Cucumber
  • 3 medium Tomatoes
  • 0.5 medium Red onion
  • 0.5 cup Kalamata olives
  • 8 oz Feta cheese
  • 60 ml Olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Dried oregano
  • 2 tbsp Capers
  • 1 tsp Salt
  • 0.5 tsp Pepper

    Cut cucumber and tomatoes into large chunks

    Thinly slice red onion into half moons

    Combine vegetables in large bowl

    Add Kalamata olives, red onion slices, and capers. Toss gently with oregano-infused olive oil dressing.

    💡 Quality olives make or break this salad - buy whole, not sliced.

    Pour dressing over salad, toss gently

    💡 Feta goes in last

    Top with thick slab of feta cheese
