Golden Turmeric Vegetable Pot with balanced flavor and layered textures

- •2 tsp Turmeric
- •1 tsp Cumin
- •1 can Coconut milk
- •2 cups Vegetable broth
- •1 large Onion
- •4 cloves Garlic
- •1 inch Ginger
- •3 cups Fresh spinach
- •1 tsp Garam masala

Cut cauliflower into florets, cube sweet potato. Dice onion, mince garlic and ginger.

Heat oil in large pot over medium heat. Sauté onion until golden, about 5 minutes. Add garlic, ginger, turmeric, and cumin. Cook 1 minute.
