General Tso Chicken Chinese
Crispy chicken pieces in a rich, sweet-spicy sauce with dried red chilies. The beloved Chinese-American classic.
Ingredients
- •500 g Chicken thighs
- •3 tablespoons Cornstarch
- •450 g Chicken breast
- •1 teaspoon Salt
- •8 pcs Dried chilies
- •4 cloves Garlic
- •0.5 teaspoon Black pepper
- •2 tablespoons Vegetable oil
- •1 inch Ginger
- •60 ml Soy sauce
- •1 medium Onion
- •60 ml Rice vinegar
- •240 ml Chicken broth
- •3 tablespoons Sugar
- •2 tablespoons Vegetable oil
- •1 teaspoon Sesame oil

Cut chicken into 1-inch pieces. Marinate with soy sauce, egg white, and cornstarch for 20 minutes.

Make sauce: combine soy sauce, rice vinegar, sugar, sesame oil, and chicken broth.

Heat oil to 350°F (175°C) in a deep pan. Deep fry chicken in batches until golden and crispy.

Drain chicken on paper towels. The chicken should be golden and crispy.

In a clean wok, heat oil over high heat. Add dried chilies and stir-fry 30 seconds.

Add garlic and ginger, stir-fry 15 seconds until fragrant.

Pour in the sauce and bring to a simmer. Add cornstarch slurry to thicken.

Add fried chicken and toss until evenly coated. Garnish with green onions and sesame seeds.
💡 For extra crispiness, double-fry the chicken.
