Ingredients

  • 4 large Yellow onions
  • 4 tbsp Butter
  • 2 tbsp Olive oil
  • 6 cups Beef broth
  • 1 cup White wine
  • 4 sprigs Fresh thyme
  • 1 whole Bay leaf
  • 1 loaf Baguette
  • 2 cups Gruyere cheese
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1

Slice onions thinly and evenly, about 1/4 inch thick.

  2. 2

Melt butter with olive oil in a large Dutch oven over medium heat.

  3. 3

Add onions, stir to coat. Cook for 10 minutes without stirring to develop color.

  4. 4

Reduce heat to medium-low. Continue cooking, stirring occasionally, for 45-60 minutes until deeply caramelized.

  5. 5

Add white wine, scrape up browned bits. Simmer until reduced by half.

  6. 6

Add beef broth, thyme, and bay leaf. Simmer for 20 minutes.

  7. 7

Season with salt and pepper. Remove thyme and bay leaf.

  8. 8

Toast baguette slices. Ladle soup into oven-safe bowls.

  9. 9

Top with bread and cheese. Broil until cheese is bubbly and golden.

  10. 10

Let cool slightly before serving - soup is very hot!
