Ingredients

  • 1 lb Dried chickpeas
  • 1 medium Onion
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cloves Garlic
  • 2 tablespoons Olive oil
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh cilantro
  • 2 tsp Cumin
  • 1 tsp Coriander
  • 3 tbsp Flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 3 cups Oil

Instructions

    Soak chickpeas overnight - do NOT use canned

    Process chickpeas, onion, garlic, herbs until coarse

    Rest mixture 30 min in refrigerator

    💡 Easier to form

    Cover and let rest or marinate for the specified time to allow flavors to penetrate deeply.

    💡 Resting allows proteins to relax and flavors to meld - do not rush this step.

    Deep fry at 350°F until deep golden brown

    💡 Low temp = cook inside

    💡 High heat with small amount of fat. Ingredients should sizzle but not steam.
