    Gather all ingredients: broken rice (com tam), pork shoulder, egg, pickled vegetables, and nuoc cham.

    Steam broken rice for 20 minutes until tender but still slightly chewy.

    Season pork shoulder with five spice, fish sauce, and sugar. Roast at 350°F for 1 hour.

    Let pork rest 10 minutes, then slice thin against the grain.

    Make nuoc cham: mix fish sauce, lime, sugar, garlic, and chili. Adjust to taste.
