    Cook the bacon: Heat a large cast-iron skillet or non-stick pan over medium heat. Lay bacon strips in a single layer—do not overlap. Cook for 4-5 minutes per side until deeply golden brown and crispy, with rendered fat coating the pan. For extra crispiness, press bacon down with a spatula during the last minute. Transfer to a plate lined with paper towels to drain. Save 2 tablespoons of bacon fat in the pan for toasting.

    💡 Chef's note: Medium heat renders bacon fat slowly without burning. The rendered fat adds incredible flavor when used to toast the bread—don't discard it.

    Toast the bread while bacon rests: Spread soft butter on one side of each bread slice (about 1 tablespoon per slice). Heat the bacon-fat-coated pan over medium-low heat. Place bread butter-side down and toast 2-3 minutes until golden, crisp, and infused with bacon flavor. For extra indulgence, you can also toast the top side. Keep warm.

    Assemble the sandwich: Spread a thin layer of mayonnaise on the un-toasted side of the bread (optional but recommended for moisture). Layer 4-5 strips of crispy bacon, followed by 2-3 slices of ripe tomato (seasoned with salt and pepper), and a generous handful of crisp lettuce. Top with the second slice, toasted side up. Cut diagonally and serve immediately with fresh cracked black pepper.
