Ingredients

- •1 lb Beef
- •4 medium Potatoes
- •4 medium Carrots
- •1 teaspoon Salt
- •1 large Onion
- •0.5 teaspoon Black pepper
- •2 tablespoons Olive oil
- •3 stalks Celery
- •4 cups Beef stock
- •3 cloves Garlic
- •2 tbsp Tomato paste
- •2 tbsp Worcestershire
- •2 sprigs Thyme
- •2 pieces Bay leaves

Cut beef into 2-inch cubes, season and brown in batches

Remove beef, sauté onions and celery
💡 High heat with small amount of fat. Ingredients should sizzle but not steam.

Add tomato paste, cook 2 min

Add stock, worcestershire, herbs, return beef
💡 Rest before slicing against the grain. Ground beef should be cooked through.

Simmer 1.5 hours until beef is almost tender
💡 Keep at a gentle bubble - rapid boiling toughens proteins and makes liquids reduce too quickly.
